Process: Made using ancient methods, the grapes from the Kalvária vineyard undergo a 15-day maceration with skins, followed by spontaneous fermentation in used barriques for 9 months on fine sediment. The wine is made traditionally without selected yeasts, enzymes, or additives, and is neither clarified nor filtered.
